The Friend Salad



A friend packed me some homemade quinoa salad.  Good, very good.  Ingredients that I noted: quinoa, Kalamata olives, grape tomatoes, Persian cucumbers (any cucumber is fine), yellow bell peppers, feta cheese, lemon juice, olive oil, and salt & pepper.  I do not know the exact recipe and its measurements, but I think one can estimate all of it depending on the desired end-serving size.  Directions seem pretty straight forward: cook quinoa; in a bowl, mix cooked quinoa with diced vegetables and add feta cheese; season with olive oil, salt & pepper, and lemon juice to desired taste; enjoy.
